Red chilli sauce
ingredients:
6 red chilies
1 tsp lemon grass root
5 Garlic cloves, peeled
2 tsp chopped ginger
1 Onion diced
1 Lemon zest and juice
1 tsp Galanga
Cut the chili peppers in 1/2 & soak them in a cup of cold water for 15 minutes. Separate the seeds & discard them. Place the prepared chilies into a mortar or food processor. Add the remaining ingredients & blend well until a thick paste.
Add a teaspoon of this mix to stir-fry's, Asian curry's and seafood's for a
wonderful flavour.
